Outre la composition chimique
variable, ksexiH-ritiiccs de IJoniet

trer que certaines des projjriétés
vitales du lait (t) varient non
seulement avec cliaque osi)èce
animale, mais encore avec les indi-
vidus d'une même espèce. I.a
conclusion à déduire est que
chaque mère sécrète un lait qui
lui est spécial, et qui s'adapte
automatiquement aux besoins de
son enfant ; ce lait contient cer-
tains ferments solubles qui sup-
pléent, dans une large mesure, à
l'insuffisance i)ermanente ou pas-
sagère de leur élaboration chez
son propre nourrisson.
ii. — Le lait des animaux, seul
substitut possible , ne peut ranplacet
avec avantage le lait maternel.
Le lait des différents animaux
a été analysé ; se rapprochent le
plus du lait de femme, jiar la
teneur en caséine, celui de l'iV
ne&se et celui de la jument ; vient
ensuite le lait de vache. Le lait
de chèvre n'occui>e que la qua-
trième place et, par consé<iuent, I
n'a aucun avantage sur le lait de 1
Besides the variable chemical
composition, the experiment» of
Bordet and Moro (♦ ) tend to show
that certain vital properties of
: milk (t) vary, not only with each
animal species but also with indi-
viduals of the same species. The
conclusion to be deduced is that
every mother secretes a milk
which is special to her and which
adapts itself automatically to the
needs of her child ; such milk con-
tains certain soluble ferments
which, in a great measure, make
up for the permanent or temporary
insufficiency of their elaboration
in her own child.
Ji. — The milk of animals, the
only possible substitute, cannot re-
place the mother's milk to advan-
tage.
The milk of various animals has
been analy.sed. That of the .she-
ass and of the mare more closely
resendde that oi woman through
its percentage ot casein ; cow's
milk comes next. Goat's milk
holds the fourth place and, con-
sequently, has no advantage over
cow's milk. The latter is the only

The diiïercnces lietwceii cow's
milk an<l woman's milk are very
great. This is due to the fact that
the cow secretes her milk for a calf
which grows more «piickly than
n child, and consequently it con-
tains more iwoteids. Moreover,
the digestive capacity of the calf
are quite different from those of
the child. Thus, while the calf's
stomach constitutes 70 0/0 of it»
digestive system, that of the child
is only Jo 0/0 ; therefore digestion
is chiefly intestinal in the child
and stomachal in the calf ; the
casein coagulates in a compact
mass ill the calfs stoninch the
better to Ik; retained in it during
the time required for its digestion.
The following chemical analyses
( Holt ) shows the difference in the
composition woman's milk and
cow's milk.

que sécrète la vache pour son
veau ne valent pas ceux que
sécrète la femme pour son nour-

Le sucre est en plus grande
quantité dans le lait de femme.
Par contre, les sels sont en plus
grande quantité dans le lait de
vache, avec cette dilTérence qu'ils
sont surtout en combinaison inor-
ganique dans le lait de vache,
tandis qu'ils sont surtout en com-
binaison organique dans le lait
de femme, ce qui favorise l)eau-
coup leur assimilation par le nour-
risson.
iii. — Les fatincs préparées du
commerce ne peuvent remplacer
l'allaitement maternât.

the woman for her child.
There is more sugar in woman's
milk.
On the other hand, there is a
larger quantity of .salts in cow's
milk with this difference that they
are chiefly of inorganic combina-
tion in cow's milk while they are
chiefly in organic combination in
woman's milk, which greatly
favors their assimilation by the
infant.
iii. — The prepat ed foods of com-
merce cannot replace the mother's
milk.
They are invariably poor in

Nous sommes maintenant fixés
sur ce point et l'honneur d'avoir
fait justice du lait inévitablement
fort contaminé revient en grande
partie aux Etats-Unis d'Amé-
rique.
A l'exposition de Paris.en 1900,
les Etats-Unis ont expédié régu-
lièrement des bouteilles de lait
provenant de fermes des états de
New- York, de l' Illinois et du
New- Jersey.
M. Alvord. du département de
l'Agriculture des Etats-Unis, qui
prés'dait à cette section américaine
de l'Exposition, rend compte du
résultat obtenu en ces termes :
' ' Les visiteurs étrangers, de même
que les experts en lait qui compo-
saient le jury acceptaient diffici-
lement notre déclaration que,
seuls les soins de propreté et la
réfrigération avaient été employés
pour maintenir ces produits à
l'état frais. Une fois convaincus
de l'honnêteté de nos prétentions,
ils décernèrent immédiatement
une médaille d'or à chacun des
exposants. Aucun pay.s, à l'ex-
ception de la France, exposaient
du lait à l'état naturel. Les pro-
duits français, lait et crème, fai-
saient contraste à côté de ceux
des Etats-Unis. Durant le mois de
juillet, aucun de ces produits lo-
caux pouvaient servir à Talimen-
tation le lendemain de leur arrivée
et même, aux températures mo-
dérées de mai et septembre, ces
produits surissaient le deuxième
ou le troisième jour. Pendant tout

bottles of milk from farms in the
states of New York, Illinois and
New Jersey.
Mr. Alvord, of the Department
of Agriculture of the United States
who had charge of that section of
the American Exhibit, reports
the results obtained as follows :
" Foreign visitors and expert
milk dealers on the jury were
hard to convince that nothing but
" cleanliness and cold " were used
to preserve these products. When
finally satisfied as to the honesty
of these exhibits, they were
promptly awarded gold medals.
No other country except France
attempted to show natural milk
and cream. The French exhibits
of natural milk and cream were
in .striking contrast with those
from the United States. At the
July show there was not a single
one of these local exhibits which
was fit to use the day after rea-
ching the grounds, and even in
the moderate temperature of the
May and September shows, the
French products were all sour on
the ! icond or third day. But there
were the natural products from
America, just as they would be
delivered to consumers in New

faire la propreté, Chapin cite le
cas d'un laitier dont le lait fournit,
un jour, à l'analyse, 9,H27,w)o
bactéries par centimètre cube.
Son établissement fut alors ins-
pecté ; on lui fit voir comment,
en entretenant mieux son étable,
en frottant {wiping) ses vaches
avec un linge humide, en ne les ,
soignant pas immédiatement
avant ou pendant la traite, la te-
neur en bactéries diminuerait.
Quinze jours après cette leçon de
choses, une nouvelle analyse du
lait donna le résultat suivant:
traite du matin. 2 1 ,300 bactéries ;
traite du soir ; 64,000 bactéries;
soit une moyenne de 42,650,quand
quinze jours avant il en contenait
y,S27,ooo. Ce résultat avait été
obtenu sans que les dépenses du
laitier eussent été augmentées.
Enfin, d'après Holt, il a été pos-
sible à une vacherie- laiterie— cta-
bassement modèle sous tous les
rapi)orts,la ferme Walker- Gordon, |
de Plainsboro, New-Jersey — de j
délivrer l ses clients, pendant une j
année entière que le contrôle al
été maintenu, un lait qui, en
movenne, n'a contenu guère plus
que" 5,000 bactéries par centimètre
cube. Ce chiffre est à comparer
aux 40,000,000 de bactéries par
centimètre cube constatés dans
l'ensemble du lait d'une ville à
certaines périodes de l'année.
Nous indiquons ci-dessous, sous
forme de règlement, le minimum

As an instance of what can be
done by cUanliness, Chapin men-
tions the case of a milkman whose
milk when analized one day, gave
9 827,000 bacteria to cubic cen-
timetre. His establishment was
then inspected and he was shown
how, by keeping his stable in
better order, by wiping his cows
with a damp cloth, by not feeding
them immediately before or. du-
ring milking, the proportion of
bacteria would diminish. A fort-
night after this object lesson, a
fresh analysis of the milk gave
the following result: morning's
milking 21,300 bacteria; eve-
ning's milking 64,000 bacteria, or
an average of 42,650, whereas a
fortnight previously it was
9,827,000. This result was obtai-
ned without additional expense to
the milkman.
Finally according to Holt, a
dairy— a model establishment in
every resi^ect, the Walter-Gordon
farm of Plainboro, New Jersey—
I delivered to its customers, during
ithe whole year the inspection
1 lasted, milk which on an average
barely contained more than 5,000
bacteria per cubic centimetre.
Compare this with the 40,000,000
bacteria per cubic centimetre
found in the milk supplied to a
city at certain periods of the year.

Tant que le nourrisson n'a pas
atteint son quatrième mois, c'est
avic le dessus de lait de 10 pour
cent (|Ue l'on prépare sa nourri-
ture ; après qu'il a atteint quatre
mois, on fait usage de lait à 7 pour
cent.
3" Comment procéder à la pré-
paration de la nourriture.- Les
quantités de lait qui seront indi-
(piées ci après sont pour un enfant |
normal. Si l'enfant est né avant
ternie ou s'il est délicat, l'on doit
diminuer \:i force de la nourriture,
d'après les indications que don-
nera le médecin de la famille ou
du dispensaire.
Si l'on se rapjx-'lle les diffé-
rences qui existent entre le lait
de vache et le lait de femme, l'on
ne s'étonnera pas des précautions
qu il faut prendi ~, jiendant le
premier mois de la vie, pour accou-
tumer le nourrisson à digérer le
lait de vache. Aussi, dans ce pre-
mier mois, variera-t-on la force
ou composition de la nourriture

faire varier plus de quatre fois
depuis l'âge de un mois à neuf
mois inclusivement.
Si vous devez employer que de
l'eau pour diluer le lait, faites la

3. — How to prepare the f(X)d.

Hearing in mind the differences
Ijetween cow's milk and wonan's
milk we catuiot be astonished at
the precautions to be taken during
the first month of the infant's
life, to accustom it to digest cow's
milk. Thus, in the first month,
the strength or composition of the
food will be changed si.x times
while it will probably not be ne-
cessary to vary it more than four
times from the age of one month
to that of nine months inclusively.
If you use nothing but water to
dilute the milk boil it and before-
hand .so that it will have time to
cool. If you use barley water,
recommended by several specia-
lists as a substitute for water after
the first month, prepare it before-
hand also but only a sufficient

Authors are divided in opi-
nion as to the advisability of
al\va>s adding lime-water to
infants' fooi'. Many recom-
mend it only when the milk
is too acid. Others say that
on« ounce should always be
added in every 20 ounces of
food. If it be decided to use
it. it should be used to dis-
solve the sugar instead of the
boiled- water prescribed for
the purpose in the alx>ve
table.
When the milk for the day
is prepared it shot; Id be at
once put in the refrigerator,
in preference in contact with
the ice, because in many refri-
gerators the temperature does
not go below 60° F., owing to
an insufficient supply of ice
or otherwise.
Chapin's dipper (fig. 11)
greatly facilitates the taking
of the top- m ilk. It holds an
ounce. The first ounce of
milk must however be taken

Les quantités ci- dessus .sont,
comme nous l'avons dit, pour la
moyenne des enfants On ne doit
augmenter la proportion de " des-
sus de lait" que lorsque l'enfant
digère bien la quantité qu'il de-
vient néces.saire d'augmenter ; ce
qui se constate par l'examen des
.selles.
Si, dans les selles, il y a des
matières non-digérées, telles que
caillots de ca.séine, diminuez la
proportion de lait dars ce que l'on
prépare de nourriture en lui subs-
tituant un once d'eau de chaux.
Si cela ne .suflBt pas, pasteurisez la
nourriture immédiatement après
.sa préparation pour la journée et
gardez sur la glace (b).

gested matter, such as clots of
casein, the proportion of milk that
is used in preparing the food
should be reduced by substituting
one ounce of lime-water. It that
does not succeed, pasteurize the
food immediately after it is pre-
pared for the day artd keep it on

fant a augmenté jusque là norma- :
lenient, on ne doit pas augmonter
la proportion de lait dans sa nour
rii'ure lorsque l'examen des selles
aura prouvé qu'il ne digère pas
cette augmentation ; on doit reve-
nir à ce qu'il prenait et plus tard
il y aura un tâtonnement à faire,
pour trouver i e que l'enfant |)eut
digérer ; et alors le premier chan-
gement que l'on fera sera d'aug-
menter la quantité de nourriture
sans augmenter dans cette nour-
riture la proportion de " dessus-
de-lait."
{B) Autre procède pour la modi-
fication du lait de vache.
Si, pour une cause ou pour une
autre, la méthode précédemment
décrite ne peut être employée, on
peut se rabattre sur la méthode
que Marfan préconise et qui est
résumée dans le tableau suivant :

Starr recommande la stérilisation

Starr recommends sterilization as
a " temporary change of diet for
delicate children suffering from
gastro-intestinal diseases."

L'enfant pt-u prendre de l'eau bouillie dans les intervalles. On mettra
l'enfant dans une grande chambre, bien aérée. Lorsqu'il y a de la
fièvre, ou devra, plusieurs fois par jour, donner un bain d'épongé
avec de l'eau à So^ V. j)endant i^ mimites environ.
Quand recommencer d donner du lait ? On commence avec du lai
très faible, dès que les selles .sont devenues normales, et on augmente
graduellement, .si les premiers repas sont tolérés et bien digérés.
L'auteur commence par mettre d'une à cpiatre cuillerées à thé de
lait dans chaque bouteille d'eau d'or>;e. Si les selles restent normales
la quantité de lait est augmentée jxitit à petit tous les jours ou tous les
deux jours. L'auteur a tiuelques lois été obligé d'attendre .i semaines
et voire même _ et 4 mois avant de reprendre l'alimentation au lait.
